These noodles are special to me because they are
homemade. My dad made up this
recipe for us, as a treat. My brothers and I love them! My mom learned the
recipe and also now makes ‘special’ noodles. Until now, there has been no
written recipe, they only make them based on their feelings. Ma Ma thinks that
her noodles are better. I think that they are both really good. This recipe
does not have exact measurements. You have to feel of how much you put in based
on what the ingredients are saying to you. It is a recipe of love. This is why
this recipe is special to me.
Ingredients-give or take…
·
1 package of udon noodles
·
1 teaspoon of peanut butter (arrowroot can be used as a substitute
thickener)
·
1 teaspoon of tamari
·
3 shakes of the Chinese seven spice
·
2 shakes Trader Joes 21 spice
·
2 tablespoons of hot water
·
1 package of dehydrated tofu and vegetables
Directions...
1. Cook Udon noodles and dehydrated tofu and veges (if
veggies and tofu are already cooked wait, and add them with the other
ingredients)
2. Drain noodles
3. Add all ingredients in a saucepan, cook over low heat
4. Serve hot
