My favorite food is the Black Bean and Corn Salad because of
the way that it is tangy and I love bell peppers. I like to serve this with friends and family. Me and my family always serve this meal
at the PHS May Festival as well as class camping trips.
Recipe:
1. 2 15oz cans
of black beans rinsed and drained
2. 15oz can of whole corn kernels drained
3. one of each
red, green, orange, and yellow diced bell peppers
4. 6 green
onions finely chopped
5. 1.5 pints of
grape tomatoes sliced
6. 1/3 cup chopped
cilantro
7. 1 crushed
garlic clove
8. 1/3 cup lime
juice
9. 1/3 cup
olive oil
10. 3/4 tsp
salt
11. 1 pinch
cayenne pepper
Preparation:
1. place lime
juice, olive oil, crushed garlic, salt, cayenne pepper in a jar, and thoroughly
shake.
2. in salad
bowl combine all of the ingredients you have just prepared.
3. EAT IT!!
