Ingredients:
1 pound cooked boneless chicken breast* (grilled, baked, or pan fried)
2 onions
Juice of 2 lemons
2 cups chopped fresh basil (or 2 tablespoons dried basil)
Butter or olive oil
Salt, pepper, seasonings
Instructions:
Dice and sauté 2 onions in butter or olive oil in fry pan on medium heat for ~5 min
Cut chicken into ~ ½-inch to 1-inch cubes
Add to pan with chopped basil
Simmer for a few minutes, adding salt, pepper, seasonings (until chicken is warm)
Add lemon juice, simmer for a few more minutes
Ready to serve over rice with a side of salad
*may be substituted with another protein source
